Cajun Skillet Chicken

Seasoning mix
1 t salt
1 1/2 t rubbed sage
1/2 t cayenne pepper
3/4 t black pepper
3/4 t garlic powder

INGREDIENTS:

6 boneless, skinless chicken breasts
Seasoning mix
1 1/2 T olive oil
1/1/2 t butter
14 1/2 oz can Italian-style diced tomatoes

DIRECTIONS:

Combine seasonings.
Sprinkle chicken with seasoning mixture on both sides.
Heat olive oil over medium high heat.
Put chicken in pan, reduce heat to medium, and brown chicken on both sides (a total of 10-15 minutes depending on thickness)
Remove chicken.
Add butter to pan and quickly scrape up browned bits from bottom of pan (don’t let the butter burn).
Add tomatoes, juice and all, and allow mixture to reduce on a low simmer for about 5 minutes. It should thicken slightly as it reduces.

Serve chicken with sauce over the top.
